2008 Fall Family Festival recipes

Here are the winning recipes from the 7th Annual Fall Family Festival at the Cherokee Depot on Saturday September 27, 2008,sponsored by Depot Renovation, Inc.

Pumpkin Pie Squares (Shirley Peterson)

3/4 cup Pillsbury's All Purpose Unbleached Flour

3/4 cup rolled oats

1 cup chopped nuts

3/4 cup Butter or Margarine, softened

1 package (4-serving size) butterscotch pudding

and pie filling mix (not instant)

1 cup coconut

1 1/2 to 2 teaspoons pumpkin pie spice

16 oz. can (2 cups) pumpkin

14 oz. can sweetened condensed milk

(not evaporated)

2 eggs

Preheat oven to 350 degrees F. (Lightly spoon flour

into measuring cup; level off). In large bowl

combine first (5) ingredients; blend well. Pour

over crust. Bake 35 to 50 minutes until

knife inserted in center comes out clean. Cool.

Cut into squares. Serve topped with whipped

cream or ice cream. (Refrigerate leftovers).

Makes 12 to 15 squares.

Apple Cake (Marci Brown)

cream together 2 cups sugar & 3/4 cup oleo

2 eggs - add & mix

3/4 cup warm coffee - add & mix

mix together & add to wet mix the following items - blend only until smooth

2 1/4 cup flour

1 teaspoon soda

1 teaspoon cinnamon

1/2 teaspoon salt

3 cups raw chopped apples - stir in


3/4 cup brown sugar

3/4 cup nuts - chopped

3 Tablespoons oleo

3 Tablespoons flour

(mix together like pie crust)

Spread cake in 9x13 pan, sprinkle on topping

Bake in Oven at 350 degrees F. for 40-45 minutes

Apple Scrapple (Marci Brown)

Mix together the following six items

4 cups chopped apples

1/2 cup brown sugar

1/2 cup softened butter

1 cup quick oats

1 teaspoon cinnamon

1/2 cup white sugar

1/2 cup chopped nuts - put over top

Butter 9x13 pan, place in apple mix

top with nuts

Bake in Oven at 350 degrees F. for 20 minutes

Serve warm over ice cream.

When cold it is great with yogurt.

Apple Turnovers (Marci Brown)

1 package of pie crust

2 rolls - open both rolls - spread out & cut into 8 equal pieces

mix the following four items & place 1/2 cup on each section of pie crust

4 cups chopped apples

1/2 cup brown sugar

1/2 cup white sugar

1 teaspoon cinnamon

Pull pie crust around apples to make a closed bundle.

Place in a buttered 9x13 pan.

Place a teaspoon pat of butter on each bundle.

Bake in Oven at 350 degrees F. for 40-45 minutes.

Pumpkin Bundt Cake (Marci Brown)

1 box yellow cake mix

1 teaspoon nutmeg

2 teaspoons cinnamon

1/2 teaspoon ginger & cloves

1/2 cup sugar

3 eggs

1 - 16 oz. can pure pumpkin

1/2 cup oil

1/3 cup water

mix together & pour into buttered & floured bundt pan.

Bake in Oven at 350 degrees F. for 45-55 minutes

Maple Glaze:

1 cup powdered sugar

1 teaspoon maple flavoring

1/2 teaspoon vanilla

1 Tablespoon melted butter

6 teaspoons milk or cream

Stir & pour over cooled cake.

Pumpkin Dump Cake (Marci Brown)

mix the following six items together & pour in buttered 9x13 pan

1 - 29 oz. can pure pumpkin

1 - 12 oz. can evaporated milk

3 eggs

1 cup sugar

1 teaspoon salt

3 teaspoon cinnamon

1 box yellow cake mix - sprinkle on top

3/4 cup melted butter - pour over cake

Bake in Oven at 350 degrees F. for 50 minutes.
